Breakfast Casserole Recipe


Preheat oven to 350 degrees.

In a 9 x 13 inch baking pan spread two cups grated cheddar cheese.

Evenly spread one pound browned sausage crumbles over cheese.

Mix 6 well beaten eggs with 1 cup Green Fudge mix. 

(Use more or less Green Fudge mix to suit your taste.)

Spread the mix over the cheese and sausage.

Spread two cups grated cheddar cheese on top.

Bake at 350 degrees for thirty minutes.

Allow to cool so it is easier to cut.

Cut into 1" x 4.5" pieces.  

(Individual pieces may be wrapped in parchment paper for refrigeration or freezing.)

When ready to prepare breakfast, place a 1" x 4.5" piece of Breakfast Casserole in a flour tortilla and microwave until warm.

One pan will provide 26 pieces.  

This recipe makes a quick and easy breakfast for four to six days.


Add Gourmet Red Sauce after heating if desired.
