Beans & Rice Casserole Recipe

McKinney Gourmet Foods

Cook 2 cups of rice.

Drain and rinse one can of corn and one can of pinto beans.

Mix together 1/4 - 1/2 cup of Gourmet Green Fudge, 8 oz. of sour cream and 1/4 tsp of salt.

​Spray a 2-quart glass baking dish with a non-stick cooking spray.

​Combine all of the ingredients and pour them into the baking dish.

Sprinkle 1 - 2 cups of Mexican-style cheese on top

Bake at 350 for 40 minutes or until dish is warm and cheese is melted. 

Optional additions: 

1/8 - 1/4 tsp Chili Powder

1/8 - 1/4 tsp Black Pepper

​Guacamole or avocado slices on the side

Tip - I normally use 1/3 cup of Gourmet Green Fudge.
